Hope this finds you all well, healthy and happy!!

Ok, remember , we’re still dishing out a few healthy snacks for your football TV watching this fall or really anytime you want a healthy choice. So, this one today is from Chef David Burke in NYC and has a long name – Virginia Maple Pepper Bacon Strips with Boston Lager Glaze … holy smokes, my mouth is watering already!

The ingredients; 16 slices thick-cut bacon, 1 cup of honey, 1 cup maple syrup, 2 cups Samuel Adams Boston Lager, 2 tbsp grainy Dijon mustard, 2 tbsp dry mustard, 3 tbsp pepper.

How to make it; Preheat oven to 300 degree F. Place parchment paper on a sheet pan and lay bacon strips on it. Cover with a second layer of paper; bake for 15 minutes. Combine honey and syrup and boil until caramelized. Add beer and cook until its volume is reduced by about half. Add both mustards. Take the bacon from the oven and baste it in the honey/syrup mix, sprinkle with the pepper and return to the oven at 275 degrees F to bake until crispy – about 10 minutes. Makes roughly 4 servings.
